Spain stands out in sustainable cuisine: 57 restaurants awarded with Green Star

The Michelin Keys recognise hotels for their luxury, charm and exceptional service, raising the standard of hospitality.

Sustainability and haute cuisine go hand in hand in Spain and proof of this is that the Michelin Guide has awarded the Green Star to 57 restaurants in the country. This time there are nine new gastronomic venues on the list of award winners. The Michelin Green Star, introduced in 2020, rewards restaurants that integrate responsible practices into their daily operations, such as the use of local ingredients, reduction of food waste and energy efficiency. According to the Michelin Guide, this award recognises not only culinary excellence, but also a positive impact on the environment. Among the new restaurants distinguished in 2025 are La Boscana (Lleida), Bistrot 1965 (Girona), DSTAgE y Tramo (Madrid), Taller Arzuaga (Valladolid), O Secadeiro (A Coruña), Espacio Amunt (Tarragona), Cal Paradís (Castellón) y Restaurante 1497 (Barcelona).
